When you have a hard week; training, work, diaper changing, whatever, it’s okay to treat yourself and just relax.  Rest and stress free living are just as important as beating yourself to death doing burpees.  Aside from hitting the gym Saturday morning to get right with Dr. Danny I worked pretty damn hard at doing absolutely nothing the whole weekend and it was awesome.  I even skipped out on the Criminals Sushi B-day Bash to take advantage of some much needed catch up sleep.  What can I say?  I’m getting old and have an early rising son.  Sorry, the next Dragon Roll will be on me. 

One of my stress free weekend highlights, along with watching my wife kick ass in her second dash and splash (hurray 5 minute improvement) was indulging in some paleo chocolate custard.  This special little desert is easy and delicious.  If you have a sweet tooth, and we all do from time to time, this just may be the cure you’re looking for.  It’s definitely enough to curb a craving.  Best part is that’s its super easy to make.  My wife, bless her soul, has many talents, cooking not being one of them.  I’m being nice here but she burns toast.  Despite her woes with savory snacks she has found a niche making sweet and easy paleo desserts.  Those dynamite brownies were all her.  To be honest, living paleo didn’t really take off in our house until she jumped on board and found a positive way to be a part of the action.  Like most things, eating paleo is better with company and support. 

For your pleasure I share with you, via Everyday Paleo, Chocolate Custard.  I hope you found a moment this weekend to get right and release the tension.  If you didn’t you need to before the weekend is over.  If that is a common occurrence it has to be dealt with.  Hope this custard and the ramblings on this blog do a little to lessen the load and bring on the warm and fuzzies.   

Chocolate Custard
1 can coconut milk
1 cup dark chocolate chips
1 teaspoon cinnamon
A splash of rum (optional)
In a sauce pan, melt the chocolate chips into the coconut milk over medium low heat while stirring with a whisk.  Add the cinnamon and the splash of rum.  Pour the custard into small serving dishes and place in the fridge for at least 2 hours.  Top with homemade whipped cream. If you do not want your kids to acquire a taste for liquor just yet, you can always pour half of the custard into serving dishes before you add the rum to the remaining half for grown ups! I am sure you can make this a million different ways so get creative and enjoy! Makes seven 1/4 cup servings – less if you serve in larger serving dishes.
